Olive Oil Tasting lesson by MONOGRAM Team

Now, it’s time to indulge in our world, the authentic world of MONOGRAM Monovarietal EVOOs.

How to do it.

Just follow the following steps…

4 BASIC STEPS

  1. Pour about 15ml of extra virgin olive oil into a suitable cup. Hold the cup with one hand to warm up the oil and with the other one cover the cup. Swirl gently the cap slightly in all directions to wet the inner surface with the olive oil in order to release the aromas.
  2. Bring the glass to your nose and take deep short breaths. Sniff the sample to detect and evaluate the fruitiness and aroma. Is it pleasant? Is it fresh? Can you recognize any aromas?
  3. Take a small ship of olive oil into your mouth. Take short inward breaths through your teeth to distribute the sample through the oral cavity (It is very important to distribute the olive oil throughout the whole of the mouth cavity, from the front part of the mouth and tongue along the sides to the back part and to the palate support and throat. Do you notice any bitterness?
  4. Swallow a small amount of the sample to detect possible pungency (peppery-spicy). Both bitter and pungent are positive attributes and closely related to the quality and healthy attributes of a high-quality Extra Virgin Olive Oil (EVOO)
